I finally tried out a cream cheese filling for my king cake recipe. Recipe is below. It makes enough for two king cakes. I rolled out my dough pretty thin, smeared the filling along an edge, and rolled it over to seal in the filling. Then I dusted the dough with cinnamon and finished rolling it up.
Ingredients:

2 lbs full fat cream cheese

250g powdered sugar

25g AP flour

1 egg
Directions:

Beat together room temperature cream cheese and 150g of powdered sugar. Start at a low speed so the powdered sugar doesn’t make the kitchen white.

Beat in 25g flour

Beat in 1 egg

Beat in remaining 100g powdered sugar. Beat until smooth.
